JOB DESCRIPTION

MAINS RESPONSIBILITIES

• Ensure that all menus, recipes, methods and specifications are adhered to, immediately rectifying any discrepancies; undertake regular recipe reviews. 
• Manage all bread productions at breakfast, lunch and dinner in all outlets, in terms of quality & freshness, and in accordance with the recipes provided by the Corporate Office ; demonstrate the ability to master bread decorations for various buffet themes and/or special occasions, as required by the Executive Chef and/or the Executive Pastry Chef. 
• Regularly communicate with the Provisions Team to utilize highly perishable food items and check fresh produce chillers, to avoid shortages during the cruise. 
• Ensure that bakery personnel transport their provisions with the correct utensils, from the storeroom to their respective outlets; countercheck daily Storeroom deliveries, for accuracy. 
• Provide the necessary guidance/training and information to the assigned section to maximize productivity & operations.
• Ensure economical work practices and control food production to minimize and/or avoid wastage. 
• Ensure that food preparations/storage are in line with all Public Health Policies and Company Regulations and enforce & maintain “clean as you go” work habits. 
• Separate & remove garbage and place it in designated containers; clean garbage as often as needed, ensuring those separation procedures and all Public Health Standards are maintained. 
• Ensure mise-en-place for all areas of responsibility are prepared 15 minutes prior to service. 
• Be present during loadings (in the absence of the Head Baker) for quality control and assurance; prepare daily electronic requisitions, according to the Guest count/forecast figures.
• Demonstrate the ability to take over the Head Baker’s position for a temporary period (with the necessary training) at any given time; assist the Head Baker with supervising the Bakery operation

JOB REQUIREMENT

BACKGROUND

• Must be Vietnamese citizens.

• A required minimum of five years professional baking experience, including at least one year experience as a Baker within a premium brand hospitality environment; previous culinary education is an advantage. 
• Must have an in-depth understanding of European bakery practices; demonstrate excellent hands-on techniques and an ability to exceed expectations. 
• Fluent in English - must have excellent English communication skills to clearly interpret and orate documents, such as menus and recipes. 
• Flexible, stress resistant, committed team player and exceptional work ethic is required. 
• Guest-focused, service-oriented, positive personality, professional appearance, and impeccable hygiene standards, with excellent knowledge of all Public Health and Sanitary Policies are required. 
• Must be at least twenty-one (21) years old, able to physically handle 50+ lbs. (30KGs) on a daily basis, and work a minimum of eleven hours a day, seven days a week. 
• Previous cruise industry experience is an advantage.

SALARY AND OTHER BENEFIT

BENEFITS

• Monthly salary is paid via on-board Visa card, no tax deduction.

• Five (5) paid vacation days for each month worked is included in the salary; this is accumulated and only paid at the end of the contract.

• Health insurance is provided during the contract period (not applicable to vacation).

• All crew have life insurance at $100,000 death in service benefit.

• No charge for crew laundry facilities, including detergent dispensers.

• Free Wi-fi on-board.

• Medical and visa expenses will be reimbursed on the first payroll against original receipts.

• The company covers flights and transfer to the vessel from and to your nearest international airport of your country of residence; hotel overnight is optional for long-distance travels.

• Uniform is provided; including shoes and safety equipment, and maintained by our main laundry.

• Two-crew only recreational areas (indoor and outdoor).

• Access to the guest gym after 10 PM.
